Baked Mackerel with a Chilli Drizzle

Mackerel is a delicious nutritious fish, with intense creamy meat packed with omega-3 fatty acids.

Whilst the contents of this recipe have been developed for use in conjunction with a Neff oven, it is possible to achieve successful results when using different oven brands. Simply follow the recipe and refer to your appliance user manual, as some manufacturers may suggest using higher temperature settings.

Serves 4
190°C CircoRoasting
4 whole mackerel, gutted, cleaned and heads removed
1 tbsp sunflower oil
2 small lemons, thinly sliced
4 thick slices of root ginger

For the chilli drizzle

1 red chilli, deseeded and finely chopped
1 clove garlic peeled and finely chopped
1 tsp sesame oil
Grated zest and juice of 2 limes
2 tbsp soy sauce
2 tbsp finely chopped chives or coriander
2 tsp toasted sesame seeds

1. Place the fish in a tray lined with non-stick paper. Score the mackerel 3 times on each side and brush lightly with oil. Tuck some lemon slices and the ginger in the cavity of each fish and scatter the rest of the lemon slices around.

2. Roast on Shelf 3 on CircoRoasting 190°C for 5-6 minutes, then turn over and cook for a further 5 minutes until cooked through.

3. To make the chilli drizzle, mix together the chilli, garlic, sesame oil, lime zest and juice, soy sauce, chives and sesame seeds. Pour the drizzle over the mackerel and serve.


Cook’s tip: To save on chopping when making the drizzle, whizz the whole chilli, garlic clove and chives in a mini chopper until finely chopped , then stir in the sesame oil, lime zest and juice, soy sauce and sesame seeds.
